Do you still have warranty coverage? I fear your logic board has a problem. Full system lockups like you are facing here could be either a CPU failure or the RAM and/or flash storage in your case via the T2 is encountering issues. As this is a fully closed off system (everything is soldered on) we can’t diagnose it beyond a good guess. Time to visit an Apple Store - Sorry ;-{
